RECIPE: SIMPLE BANANA PANCAKES

This really simple banana pancakes recipe – which will typically make 2 good sized pancakes – will make a great breakfast. Try serving them with yoghurt, honey or chopped fruit.

INGREDIENTS

  • 2 eggs
  • 1 ripe banana
  • Few drops vanilla essence
  • Pinch baking powder

 

METHOD

  1. Mash the banana in a bowl.
  2. Add the eggs along with a few drops of vanilla essence and a pinch of baking powder, and stir together.
  3. Spoon the mixture into a warmed frying pan, making your pancakes as large or small as you wish. Cook for around 2 minutes before turning over and cooking on the other side.
